Anzac Slice


INGREDIENTS:

1 cup plain flour
2/3 cup raw sugar
1 cup rolled oats
1 cup organic desiccated coconut
100g pure butter
¼ cup golden syrup
½ tsp bi-carb soda
1 tblsp hot water

METHOD:

1.    Preheat oven to 180oC. Grease slice tin with butter and line with baking paper.
2.    Place flour, sugar, rolled oats and coconut into a large bowl and mix to combine. Make a well in the centre.
3.    Combine butter and golden syrup in a small saucepan. Stir over a low heat until butter has melted and mixture is smooth.
4.    Dissolve bi-carb in the hot water and add immediately to the butter mixture. Stir until foamy. Add to dry ingredients and mix until well combined.
5.    Place mixture into prepared tin, pressing firmly with the back of a spoon until surface is smooth. Bake for 25-30 minutes, until golden brown.
6.    Cool in the tin and then lift slice out and cut into small squares. Store in an airtight container for up to 3 days.
