Cheesy Nachos
Ingredients
300g mince
½ cup vegetable puree
I jar mild, tomato salsa
½ cup tomato puree
400g tin Cannellini beans (rinsed and drained)
Grated cheese
Plain corn chips
Sour cream (optional)
Avocado mashed with a little lemon juice and salt and pepper (optional)
NOTE: The vegetable puree and cannellini beans in the mince are optional – the mixture can be made without them. Likewise, you can leave out the sour cream and avocado. Try different variations to see what your family prefers.
Method
Brown the mince in a medium saucepan over a medium to high heat. When browned, reduce heat to medium and add vegetable puree, salsa, tomato puree and cannellini beans. Taste the mixture once heated through and if a little too strong in flavour for your family, add a teaspoon of sugar.
Nachos can be served in a number of ways depending of the ages of the children in your family and what eating experience you would like to provide them with.
Put a handful of corn chips in one third of a bowl, a handful of cheese in another third of the bowl and the mince mixture in the other third. (Make sure you provide the children with a spoon and a wipe or washer!)
Put the corn chips onto an oven tray, sprinkle with cheese and bake in a moderate oven until cheese melted. Serve in a bowl with mince mixture.
Using a baking dish or tray, layer ingredients by placing half of the corn chips on the bottom, sprinkle over a small amount of the cheese and then the remaining corn chips followed by the mince mixture and some more cheese. Bake in a moderate oven until cheese is melted.
All varieties of the nachos can be served with sour cream and/or avocado mash depending on your family’s tastes
