Chicken Balls
Ingredients
500g minced chicken
1 tsp chopped parsley (optional)
1 clove minced garlic (optional)
1 egg
1 cup crushed organic rice flakes (cornflakes or homemade breadcrumbs can be used gluten free is not needed)
Sea salt to taste
Olive oil
Method
Place rice flakes (or substitute) into a bowl and mix in salt.
Combine chicken mince, parsley and garlic in another bowl.
Form into balls. Dip balls in egg and then coat in crushed rice flakes.
Heat some oil in a frypan and shallow fry chicken balls until cooked
through.
Can be served by putting toothpicks or paddle pop sticks into them.
