Chocolate and Coconut Truffles
Ingredients
1 packet of Arnotts Milk Arrowroot Biscuits - CRUSHED
395g can sweetened condensed milk
1 ½ cups organic coconut
180g Lindt or Green and Blacks dark chocolate
¼ cup Craisins (optional)
Method
1. Line a baking tray with baking paper.
2. Mix crushed biscuits, sweetened condensed milk, 1 cup of the coconut and Craisins if using, in a large bowl.
3. Melt the chocolate and stir into the dry ingredients until well combined.
4. Place the remaining ½ cup of coconut into a bowl. Roll heaped teaspoons of mixture in coconut and place on a tray or plate lined with baking and chill before serving.
NOTE: Have a bowl of water nearby when rolling mixture into balls. If you slightly dampen your hands, the mixture will not stick as much. If you prefer white chocolate, replace dark chocolate with Green and Blacks White Chocolate and follow the recipe.
