Christmas Fruit and Nut Slice

INGREDIENTS:

3 cups organic cornflakes
¼ cup organic currants
¼ cup organic sultanas
¼ plain flour
80g pistachio kernels, chopped
½ cup craisins
395g can Nestle sweetened condensed milk
70g Green & Blacks dark chocolate, melted

METHOD:

1.    Preheat the oven to 180oC / 160oC fan forced. Grease and line a slice tin with baking paper, leaving a slight overhang.
2.    Lightly crush the cornflakes by hand in a large bowl or in a snap lock bag. With the cornflakes in a bowl, add the currants, sultanas, flour, pistachios, craisins and condensed milk and stir to combine.
3.    Spoon the mixture into the prepared tin and press into the tin with the back of a spoon. Bake for 25 minutes or until quite golden and firm to the touch. Cool completely in the tin.
4.    Cut the slice into desired sized pieces and place on a wire rack with a tray underneath. Spoon the melted chocolate into a small snap lock bag and seal. Snip of the edge of a corner and pipe the chocolate across the slice pieces in a zigzag pattern. Leave to set.
