KinderChef's Chicken Nuggets wuth Carrot and Zuchini

Chicken Nuggets    
makes close to 1 dozen

500gms organic chicken breast fillets
1 clove garlic crushed finely
¼ small brown onion finely diced
¼ cup grated carrot
¼ cup grated zucchini
2 TBS chopped parsley
Sea salt to taste

Gluten free plain flour for coating
Olive oil for frying


1. Chop the chicken into medium size pieces and put into the food processor with the onion and garlic. Process until it looks like mince texture.

2. In a mixing bowl add the chicken, carrot, zucchini, salt and parsley. Mix until well combined.

3. Using a teaspoon measure out the mixture and roll them as if making meatballs, place on a plate and cover, put in fridge for about 30 mins.

4. Heat up on medium temperature a non-stick fry pan with a good glug of olive oil, take chicken balls out of fridge and flatten them a little to make a nugget shape, roll in the flour and gently fry till golden brown.


This recipe is gluten,dairy,additive,preservative,lactose free.
Freezer friendly when raw or cooked
Very child friendly, they can help grate and roll the balls.
