Lime Seasoning
INGREDIENTS:
30g pure butter
1 medium onion, finely diced
2 cloves garlic, crushed
1 tsp grated lime rind
1½ tbsp freshly squeezed lime juice
¼ cup slivered almonds, toasted
2 tbsp coriander leaves, chopped
1 cup cooked rice
METHOD:
- Place the lime rind, lime juice, almonds, coriander and rice in a large bowl. Stir to combine.
- Heat the butter in a large pan and add the onion and garlic. Cook until the onion is soft.
- Add the onion mixture to the bowl and mix well.
