Maple and Banana Bread

This recipe has been submitted by Kim Burrow. Kim says; "This is one of my favorites, it is especially awesome because you can eat this all day long when on the RPAH elimination diet ;) I make it into mini muffins for the kids. It is not exactly a kid's party food, but a good morning tea with other mums food.
 

Ingredients:

125 g butter1/2 cup sugar
2 tablespoons pure Maple Syrup
2 eggs
3 large bananas mashed
3/4 cup plain flour
3/4 cup self-raising flour
1/2 teaspoon baking powder

Method:

  1. Preheat oven to 180°C  and grease 2 small loaf pans (or one super big one)
  2. Beat butter sugar and maple syrup with electric mixer until light and fluffy.
  3. Add eggs one at a time beating after each addition until just combined. 
  4. Transfer butter mixture to a large bowl and add bananas. Stir with a wooden spoon until just combined. Sift flours and baking powder over butter mixture and stir until just combined.
  5. Spoon mixture into prepared pans and bake for 35 minutes. If you choose to use one super size loaf pan, bake for 45 minutes. Check it is cooked by inserting a skewer into the centre of the loaves, it is cooked when the skewer comes out clean. Leave in the pan for 5 minutes, then turn onto a wire rack.
