Mini Choc Muffins

Mini Choc Muffins

2 cups SR flour
2 tblsp cocoa (or cocao)
1/3 cup raw sugar
25g pure butter, melted
1 cup milk
½ tsp aluminium free baking powder
½ cup Nestlé dark chocolate bits
½ cup Nestlé white chocolate bits
1 egg

  1. Preheat oven to 220°C or 200°C for fan forced oven. Grease mini muffin pan or line with mini paper cases.
  2. Sift flour, baking powder and cocoa into a mixing bowl. Add sugar, dark chocolate and white chocolate.
  3. In a separate bowl, mix melted butter, egg and milk together.
  4. Add butter mixture to dry ingredients, mixing lightly.
  5. Spoon into muffin pans and bake for 20–25 minutes.
  6. These can be served without icing as they are yummy just as they are! If you want to add some colour for St Patrick's Day, just add some green icing using natural food colourings.
NOTE: larger muffins can be made with this mixture, just be sure to increase the cooking time. Muffins are cooked when they spring lightly back when touched.
