Passionfruit Rounds
INGREDIENTS:
125g pure butter, softened
1/3 cup raw caster sugar
1 tsp natural vanilla essence
1 passionfruit, halved
1 cup plain flour
¼ cup rice flour
METHOD:
- Preheat the oven to 160°C (140°C for fan-forced). Line two baking trays with baking paper.
- Beat the butter, sugar and vanilla in a large bowl until the mixture is light and fluffy. Stir in the passionfruit pulp and then the flours.
- Roll the dough into small balls and place on the prepared trays. Flatten the balls with the back of a spoon.
- Bake for 12–15 minutes or until just golden. Leave the balls to stand on the trays for 5 minutes before transferring to a wire rack to cool.
TIP:
These can be iced to look extra special—combine 1 cup pure icing sugar with 1 tbsp water and stir until smooth. If the icing is too thin, add a little icing sugar, a tbsp at a time. If the icing is too thick, add a couple of drops of water at a time. Add a squeeze of lemon juice for some zing in your icing.
