Pear Muffins
Ingredients
1 1/2 cups organic SR Flour
1/2 cup brown or rapadura sugar
1 egg, lightly beaten
2/3 cup milk
1/4 cup olive oil
1/2 cup fresh or canned 100% pears
Method
Pre-heat oven to 180 degrees C. Spray 12 cup muffin pan with olive spray (or grease with butter).
Place all ingredients into a bowl and stir with a fork until mixed.
Three quarter fill cups of muffin pan with mixture and bake for 15-20 minutes. Turn onto wire rack to cool.
This is a great fail safe recipe and you can substitute pie apples, diced peaches or apple puree in place of the pears.
