Yoghurt Fruit Loaf

I made this last week and it is very tasty! Perfect to make to take along when you are invited to a last minute gathering.

INGREDIENTS:

100g pure butter
2 tsp orange rind, finely grated
¾ cup raw caster sugar
2 eggs
2 cups wholemeal SR flour
1 cup organic plain yoghurt
1/3 cup 100% orange juice
1 cup finely organic dried figs,chopped
1 cup organic raisins, chopped

 

METHOD:

  1. Preheat oven to 180°C (160°C for fan-forced). Grease a loaf tin.
  2. Beat the butter, rind, sugar, eggs, flour, yoghurt and juice in a bowl on low speed until the ingredients are just combined. Stir in the dried fruit.
  3.  Pour the mixture into the tin and cover with foil. Bake for 1 hour 15 minutes and then remove the foil. Bake for another 15 minutes.
  4. Stand the loaf in the tin for 10 minutes before turning onto a wire rack to cool.
  5. Cut into slices and serve.

TIP:

Try serving toasted with butter for Christmas brunch.
